Black Beans, where have you been all my life!?

My sister came to visit back in July and she brought recipes with her. I have never been much of a bean person. I LOVE nachos though and a lot of times that includes beans so I have gotten used to them over the years as long as they were refried beans. Kim asked if I liked black beans and I had to be honest. I had never tried them because I don't really care for beans. I told her I would try them though since I am always trying to find healthy things to eat instead of the crap i LOVE to eat so much. I am always looking for high fiber foods too which has black beans written all over it. So we made black beans and now I am in LOVE with them. My new favorite meal is chicken and black bean enchiladas! MMMMMMMMMMMM Well today I made a burrito that was so simple yet so wonderful. I still don't care for the texture of beans so what I do is throw them in the blender with a little bit of water. Kim gave me that advice and I LOVE her for it. today I took a can of black beans and washed them off, threw them in the blender and turned it on. BUT first I added a can of rotel! Holy cow it makes them so flavorful and spicy if you like spice in your burritos. Try it and you won't be disappointed. Then just add what ever you want and enjoy. I just did rice, beans, rotel, cheese and olives. MMMM MMMM GOOD!

How have you never had black beans??? That is all I ever get at Durangos!! Yeah they are the bomb with good salsa too!! Now I want Mexican food. YUM!

That's how I made the black bean salsa, with the rotel. I love that stuff!

Hi Katie -

Here is a recipe of an avacado dip you can have with chips.

Here's the bean dip recipe:
1 can black beans, rinsed and drained
2 small mangos
2 med/small avocados
1/2 red onion, finely chopped -I usually do 1/4 of a red onion or less, because once I put in an entire half and we almost died our breath was so bad. :)
2 T. fresh parsley
2 T. olive oil
3 T. fresh lime juice (2 small limes)
salt
tobasco to taste

Chop Avacado's into mini bite size pieces, not mashed like in guacamole. Do the same with the mango's. Combine all ingredients and then eat with your favorite tortilla chips. YUMMO!
